Vegan Lemon Buttercream, and Lemon Cream Cheese Frosting.

Lemon Buttercream:1/2 c. shortening1/4 c. margarine, softened2 c. confectioners sugar2 T. fresh lemon juice2 t finely grated lemon zest1 t vanilla extract

In a small bowl, cream the shortening and margarine until well combined. Add the confectioners sugar in roughly 1/2 cup additions. After each addition of sugar, add a splash of lemon juice and beat well with a handheld mixer. Add vanilla and beat for another 3 to 5 minutes until smooth, creamy and fluffy. Wrap tightly with plastic wrap and refrigerate until ready to use.

  • Looking up from the bottom of the pool, maybe kindergarten age, and watching Shannon dive in to pull me back up. I don't feel fear, I'm just focusing on the play of sunlight through the water. It's a calming memory, and water is my go to comfort when anxious or upset.
  • Staying over at my best friend's house in New Mexico, Rachel Crane, and watching Killer Clowns From Mars and Cocoon, and having nightmares because of it.
  • Staying at the Bescancen's in Alaska, while Mom & Dad were house shopping in PA. Walking outside and watching the Aurora Borealis; also, having a nightmare and going down to sit in Mrs. Besancen's bead shop with her for a while.
