- Ingredients
- 1 medium onion (cut in 1/8ths)
- 1 medium green pepper (cut in 1/8ths)
- 1 garlic clove
- 1/2 cup flat leaf italian parsley
- 2 medium tomatoes (cut in 1/8ths)
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 1/8 tsp. cumin
- Place onion, green pepper, garlic, and parsley in blender or food processor with metal blade
- Coarsely chop with on/off pulse
- Add tomatoes, salt, pepper, and cumin
- Chop on and off until tomatoes are 1/4 inch chunks
