• Ingredients
    • 1 medium onion (cut in 1/8ths)
    • 1 medium green pepper (cut in 1/8ths)
    • 1 garlic clove
    • 1/2 cup flat leaf italian parsley
    • 2 medium tomatoes (cut in 1/8ths)
    • 1/2 tsp. salt
    • 1/8 tsp. pepper
    • 1/8 tsp. cumin
  • Place onion, green pepper, garlic, and parsley in blender or food processor with metal blade
  • Coarsely chop with on/off pulse
  • Add tomatoes, salt, pepper, and cumin
  • Chop on and off until tomatoes are 1/4 inch chunks
