Bake: 25 minutes (350 degrees)


  • 4 chicken breasts, deboned, skinned
  • 6 C fresh broccoli, broken into pieces
  • 2 (10 3/4-oz) cans cream of chicken soup
  • 1 C real mayonnaise
  • 2 t fresh lemon juice
  • 1 t curry powder
  • 1 C sharp cheddar cheese, shredded
  • 2 T butter, melted
  • 3/4 C bread crumbs



  • Steam chicken breasts for about 20 minutes or until the chicken is tender.
  • Cool & cut into bite sized pieces and set aside.
  • Steam broccoli for 4 minutes and drain. (Don't overcook, or will be mushy.)
  • Arrange broccoli in a greased 9x13 inch casserole dish.
  • Arrange chicken pieces on top of broccoli.
  • Combine the next four ingredients in a medium bowl.
  • Mix together with a wire whisk until the lumps are gone.
  • Pour this mixture evenly over the chicken.
  • Sprinkle the cheddar cheese over the casserole.
  • Top with a mixture of melted butter and bread crumbs.
  • Bake at 350 degrees for 25 minutes or until the casserole is bubbly and light brown on the top.
  • Serve over steamed rice or Chinese noodles.
