• 4 bread slices, toasted
    • 4 pieces tender lettuce
    • 1 large carrot, shaved into ribbon-like strips
    • 1 large tomato, thinly sliced
    • 1/2 medium cucumber, thinly sliced
    • small handful of sunflower seeds (optional)
    • 2 tbsp balsamic vinegar
    • vegan tzatziki
  • top two slices of toasted bread with the lettuce, carrots, tomato slices, and cucumber, sprinkle with sunflower seeds and drizzle balsamic vinegar
  • slather the top slice of bread with the soy tzatziki and place on top of the stack of veggies
