• inspiration: bosh's frittata recipe
    • 300g of chickpea flour
    • 300g of oat milk
    • 50g of dried tvp, rehydrate (or seitan, if not gf)
    • 1 sprig of rosemary
    • 1 small tomato
    • 1 tbsp of nutritional yeast
    • salt
    • pepper
  • wash the rosmary, dry off the water and mince its leaves; if you choose to use seitan, dice it or chop it finely, dice the tomato
  • for the frittata i took inspiration from bosh's video, making some swaps: in a bowl combine some chickpea flour with the same amount of oat milk, add some salt and pepper to taste, plus some black salt for extra eggy flavour and the nutritional yeast; gently fold in the diced tomatoes and rehydrated tvp (or seitan)
  • heat a non-stick pan (if it's not non-stick, add some oil) and pour the mixture in; let it cook, with the help of a spatula, flip the frittata and let it cook the other side
  • enjoy warm or cold ♡
