(1) while the oven is preheating to 190°, prepare the flax egg by mixing the two spoons and a half of water and the ground seeds until it reaches a gel-like consistency (2) in the meantime, combine the flour, baking soda, and salt in a separate bowl (3) using a blender makes things easier: blend the banana and flax egg until smooth and liquid; add the stevia, vanilla, and oil, and mix until well combined (4) gradually incorporate the dry ingredients while mixing — be careful not to overmix, but the batter shouldn't be lumpy; fold in the nuts (5) for a neat trick, use the "rice method": sprinkle some uncooked rice on the bottom of the muffin tin, then add muffin liners and pour in the batter, filling each halfway (6) i'm using an air fryer (because i'm *that* person), and it only took me 15 minutes; baking times may vary with other ovens, so adjust as needed!
