- turmeric rice:
- 1 tbsp olive oil
- 1 cup brown basmati rice, uncooked
- 1 tbsp grated ginger
- 2 minced cloves garlic
- 2 tsp turmeric
- 1/2 tsp ground black pepper
- 2 cups water
- 1 cube vegetable bouillon
- 1/2 lemon, juiced
- toppings
- 200g can black beans
- 1 chopped bell pepper
- 1 cup pomegranate seeds
- 1 sliced avocado
- 2 sliced green onions
- chopped fresh cilantro

- to make rice:
- heat olive oil in a pot: add basmati rice, ginger, garlic, turmeric, and black pepper and sauté for 2' - add water and vegetable bouillon, stir well, cover, and cook until just tender, but not mushy, stir in lemon juice
- to prepare bowls:
- divide turmeric rice into 2 bowls, divide the toppings among the bowls and arrange on top of the rice: black beans, bell pepper, pomegranate seeds, avocado, green onions, and cilantro
