- 2 cups cooked whole grain sorghum
- veggies: 1 red wedged onion, 1 sliced bell pepper, 3 sliced carrots, 100g halved brussels sprouts
- 1 can chickpeas
- 2 tbsp olive oil
- 1/2 lemon, juiced
- 1 tbsp ras el hanout spice mix
- 1 minced garlic clove
- 2 cups chopped spinach
- 6 black olives
- cook the veggies in some oil in a pan until crisp-tender with the spice mix and garlic, and eat with the spinach and sorghum, seasoned with olives and lemon juice!
