    • 3/4 cup quinoa/rice/couscous/any grain
    • 3/4 cup romain hearts
    • 3/4 cup cooked chickpeas
    • 3/4 cup cucumber (chopped)
    • 3/4 cup red bell pepper (chopped)
    • 1/3 cup red onion (thin sliced)
    • 1/3 cup simple hummus - or low calorie hummus
    • 1/3 cup italian olives
    • salt
    • pepper
  • method
    • mix the salad and enjoy with the hummus as a side. protein are from beans and grains. some lemon on top is soooo good
    • instead of hummus you can use tzatziki, it's super good too
