- 3/4 cup quinoa/rice/couscous/any grain
- 3/4 cup romain hearts
- 3/4 cup cooked chickpeas
- 3/4 cup cucumber (chopped)
- 3/4 cup red bell pepper (chopped)
- 1/3 cup red onion (thin sliced)
- 1/3 cup simple hummus - or low calorie hummus
- 1/3 cup italian olives
- salt
- pepper

- mix the salad and enjoy with the hummus as a side. protein are from beans and grains. some lemon on top is soooo good
- instead of hummus you can use tzatziki, it's super good too
