- 1/3 cup quinoa
- 2 cups butternut squash (or italian pumpkin)
- 4 cups kale
- balsamic vinegar
- dried unsweetened cranberries
- honey
- olive oil
- pepper
- pumpkin seeds
- salt
- method
- roast the squash in the oven / air fryer until golden, with salt and pepper and a drizzle of oil
- combine cooked quinoa & cooked (or raw) kale + the rosted diced squash - season with vinegar, honey & pumpkin seeds
- baking the squash with a touch of cinnamon is the cherry on top
