    • 1/3 cup quinoa
    • 2 cups butternut squash (or italian pumpkin)
    • 4 cups kale
    • balsamic vinegar
    • dried unsweetened cranberries
    • honey
    • olive oil
    • pepper
    • pumpkin seeds
    • salt
  • method
    • roast the squash in the oven / air fryer until golden, with salt and pepper and a drizzle of oil
    • combine cooked quinoa & cooked (or raw) kale + the rosted diced squash - season with vinegar, honey & pumpkin seeds
  • baking the squash with a touch of cinnamon is the cherry on top
