- 1 broccoli florets
- 1/2 leek, roughly chopped
- 1/4 cup favourite herbs (either parsley, basil, etc...)
- we used a mix of sage, oregano, thyme and the tiniest amount of mint
- 2 garlic cloves
- 1/2 cup chickpea flour
- 2 tbsp ground flaxseeds
- 1/2 tsp ground cumin
- 1/4 tsp pepper
- salt
- in a food processor ▸ place broccoli florets, leeks, garlic and herbs + process until the mixture is crumbly
- in a bowl ▸ pour the previous mixture, chickpea flour, flaxseed meal, cumin, cayenne pepper, and salt: mix well and squeeze together forming a dough
- form some patties ▸ heat some oil (we used coconut oil) and cook the fritters on each side until golden brown
