• 1 broccoli florets
    • 1/2 leek, roughly chopped
    • 1/4 cup favourite herbs (either parsley, basil, etc...)
  • we used a mix of sage, oregano, thyme and the tiniest amount of mint
    • 2 garlic cloves
    • 1/2 cup chickpea flour
    • 2 tbsp ground flaxseeds
    • 1/2 tsp ground cumin
    • 1/4 tsp pepper
    • salt
  • in a food processor ▸ place broccoli florets, leeks, garlic and herbs + process until the mixture is crumbly
  • in a bowl ▸ pour the previous mixture, chickpea flour, flaxseed meal, cumin, cayenne pepper, and salt: mix well and squeeze together forming a dough
  • form some patties ▸ heat some oil (we used coconut oil) and cook the fritters on each side until golden brown
