Ingredients
- 3/4 cup applesauce (or keep 1/3 of that as butter)
- 3/4 cup granulated sugar
- 3/4 cup packed light brown sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1 1/4 cups all-purpose flower
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 3 cups uncooked oatmeal
- 1 2/3 cups white chocolate chips
To Cook:
- Heat oven to 375 degrees
- Beat butter, granulated sugar, and brown sugar in large bowl until well blended
- Add eggs and vanilla; blend thoroughly.
- Stir together flour, baking soda, salt, and cinnamon; gradually add to butter mixture, beating until well blended.
- Stir in oats and white chocolate chips; mix well.
- Drop by teaspoonfuls onto ungreased cookie sheet.
- Bake 8-10 minutes or until golden brown. Cool for 5 minutes before moving cookies to a wire rack to cool completely.
Makes about 4 dozen cookies
