Ingredients

    • 3/4 cup applesauce (or keep 1/3 of that as butter)
    • 3/4 cup granulated sugar
    • 3/4 cup packed light brown sugar
    • 2 eggs
    • 1 teaspoon vanilla extract
    • 1 1/4 cups all-purpose flower
    • 1 teaspoon baking soda
    • 1/2 teaspoon salt
    • 1/2 teaspoon ground cinnamon
    • 3 cups uncooked oatmeal
    • 1 2/3 cups white chocolate chips

To Cook:

    • Heat oven to 375 degrees
    • Beat butter, granulated sugar, and brown sugar in large bowl until well blended
    • Add eggs and vanilla; blend thoroughly.
    • Stir together flour, baking soda, salt, and cinnamon; gradually add to butter mixture, beating until well blended.
    • Stir in oats and white chocolate chips; mix well.
    • Drop by teaspoonfuls onto ungreased cookie sheet.
    • Bake 8-10 minutes or until golden brown. Cool for 5 minutes before moving cookies to a wire rack to cool completely.

Makes about 4 dozen cookies
