• Ingredients
    • 4 Tbsp. olive oil
    • 2 cups chopped fresh tomatoes
    • 1/2 red bell pepper, diced
    • 1/2 yellow bell pepper, diced
    • 2 cloves of garlic, minced
    • 1/4 cup chopped fresh basil
    • 1/2 tsp. each salt and freshly group pepper
    • 1 pkg. (16 oz) vermicelli, cooked according to package
    • grated Parmesan cheese
  • To Cook:
    • Heat oil in medium saucepan over medium heat
    • Add tomatoes and bell peppers and sauté for 5 minutes
    • Add garlic and cook 1 minute more
    • Add cooked pasta, salt, pepper, and basil to pan, tossing gently
    • Serve warm with grated Parmesan cheese
  • Serves 6-8
