adapted from this recipe
- 1 lb. little yellow potatoes
- 1 tbsp neutral oil
- 3-4 cloves garlic, minced
- 1 tbsp scallion whites, minced
- 2 c water
- 2 tbsp soy sauce
- 2 tbsp agave
- 1 tbsp gochujang
- 1 tsp toasted sesame oil
- sesame seeds and green onion for garnish
- heat oil in a skillet. add potatoes, cover and cook for 15-20 minutes, occasionally shaking the pan.
- add garlic and scallion whites, stirring for 1 minute.
- add water, soy sauce, agave, and gochujang. bring to a simmer, cover, and cook until potatoes are wrinkly and tender, and sauce is thickened.
- turn off heat. stir in sesame oil, toss with sesame seeds and scallion greens. serve.
