note: this is not the most refined recipe, hence all the ingredients. i'll continue to revise this recipe next time i make it.

  • 2 c tvp crumbles
  • 1/2 cup dried shiitakes
  • 3 cloves garlic, minced
  • half an onion, minced
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 2 tsp ground cumin
  • 1 tsp savory spice blend or umami spice blend
  • 3 tbsp soy sauce
  • 1 tsp balsamic vinegar
  • 1 tbsp vegan worcestershire sauce
  • 1 tsp sesame oil
  • 1 tsp dijon mustard
  • 1 tsp maple syrup
    • rehydrate tvp and shiitakes in hot water for 20 minutes. drain and mince the mushrooms, removing the stems. mince garlic and onion.
    • saute onion and garlic. add shiitakes and tvp. add spices and other ingredients, tasting as you go. when it's ready, filling should be a dark caramel-y color and slightly glossy.
