~Salad

  • 2/3 Cup cooked red quinoa
  • 1 nectarine
  • 1 avocado
  • 1/2 cup shelled pistachios
  • 1 cup thinly sliced fennel
  • 2 cups arugula

~Mustard Chive Vinaigrette (make adjustments for measurement acc. to your taste)

  • 1 sm. g. clove
  • 1/4 cup chopped chives
  • 1 tbsp honey
  • 2 tsp dijon m.
  • 1/3 cup fresh lemon juice
  • 1/2 cup evoo
  • sea salt and pepper to taste

- Put all vinaigrette ingredients in a blender and pulse until everything is combined. In a bowl add cooled r. quinoa and ~3 tbsp of vinaigrette; stir. Halve the nectarine and remove pit; slice into then pieces. Halve the avocado and cut into small chunks. Add fennel, pistachios, nectarine, and avocado. Add dressing.
