• 4 cups shredded romaine/preference
  • 1 cup chopped tomatoes
  • 1 avocado dissected and diced.
  • 2 green onions; chopped
  • 2/3 cup canned kidney beans; rinsed and drained
  • 1/4 cup black olives; sliced

Combine lettuce, tomatoes, avocado, green onions, kidney beans, and black olives in a bowl; toss. In a cup combine equal parts salsa and sour cream (~1/3C), use as dressing. Cover salad with dressing and toss to blend.

-This produces way more than one salad. If you are one person you could eat this for 4 meals. If you are planning on eating all of this yourself, cover only the bit of salad you're going to eat with the dressing. Store the rest of the salad covered and refrigerate with no dressing.
