• 6 lg. tomatoes; seeded and chopped
  • 1 seedless cucumber; chopped
  • 1 sm. red onion; chopped
  • 1 cup fresh parsley; finely chopped
  • 1 lemon; juiced
  • 1/4 cup evoo
  • sea salt and pepper to taste

- Toss the tomatoes, cucumber, onion and parsley together in a bowl. When all are combined pour lemon juice and evoo; stir. Season with salt and pepper. This yields ~8 servings. It lasts well.
