- Ingredients
- 4 Tbsp. olive oil
- 2 cups chopped fresh tomatoes
- 1/2 red bell pepper, diced
- 1/2 yellow bell pepper, diced
- 2 cloves of garlic, minced
- 1/4 cup chopped fresh basil
- 1/2 tsp. each salt and freshly group pepper
- 1 pkg. (16 oz) vermicelli, cooked according to package
- grated Parmesan cheese
- To Cook:
- Heat oil in medium saucepan over medium heat
- Add tomatoes and bell peppers and sauté for 5 minutes
- Add garlic and cook 1 minute more
- Add cooked pasta, salt, pepper, and basil to pan, tossing gently
- Serve warm with grated Parmesan cheese
- Serves 6-8
