ingredients:

  • 1 package udon noodles
  • 50 g beef slices (or pork/chicken)
  • 1/3 cup onions (sliced)
  • 1/3 cup shimeji mushrooms
  • long green onion
  • 1 tbsp curry powder
  • 1 cup dashi stock
  • 1 tsp sugar
  • 1/3 tbsp soy sauce
  • 1/2 tbsp potato starch

directions:

  • add vegetable oil and white part of long green onion into pot and saute until browned
  • remove long onion and add sliced onions and shimeji mushrooms
  • add beef slices and continue to saute
  • when beef is cooked, reduce heat to low and add curry powder
  • add dashi stock, soy sauce, and sugar and bring to boil on medium heat
  • remove foam and reduce heat to low when veggies soften
  • stir potato starch and 1 tbsp water together and add to pot slowly
  • when sauce thickens and boils, add long green onion
  • pour over cooked udon noodles
