ingredients:

  • 10.6 oz bottom round roast
  • salt/pepper
  • 1 cup dashi stock (1/2 tsp dashi stock powder in 1 cup water)
  • 1/4 cup soy sauce
  • 2.5 tbsp mirin
  • 1/4 onion (thinly sliced)

directions:

  • in a pot combine dashi stock, soy sauce, and mirin and bring to boil
  • lightly sprinkle salt and pepper all over the beef
  • heat a pan and coat with oil before searing each side of the beef
  • once entire surface is brown and add the beef into the sauce
  • bring to boil before lowering heat to low
  • simmer for 15 minutes (flip 2-3 times while cooking)
  • turn off burner and let it sit until cool
  • dunk onion into ice water for 5 minutes
  • slice beef thinly (can cover or dip in sauce when eating)
