ingredients:

  • 2 napa cabbages
  • salt
  • 2 onions
  • handful of garlic
  • a knob of ginger
  • 2 apples
  • 1/2 red bell pepper
  • 3/4 cup red pepper flakes
  • 1 tbsp orange juice

directions:

  • cut napa cabbage into long strips for white kimchi and regular pieces for red kimchi
  • add cabbages into 2 bowls + 2 tbs of salt per cabbage + 2 ~ 3 cups of water in each bowl to brine overnight
  • rinse and drain
  • make base sauce for both kimchi: onions, garlic, ginger, apple, orange juice, 2 cups of water, half a handful of sea salt
  • divide half and half of base sauce for both bowls
  • white: add small slivers of apples + jalapenos
  • red: red pepper flakes, blended red bell pepper
  • put in tight jars and ferment (or eat)
