ingredients:

  • 1 lbs shrimp
  • 2 limes
  • salt/pepper
  • 1 head romaine lettuce (chopped)
  • 1/2 cup cherry tomatoes (halved)
  • 1/3 cup cilantro leaves (chopped)
  • 2 avocados (chopped)
  • 2 tbsp olive oil
  • 1 tbsp honey
  • 1/2 tsp chili powder
  • (optional) tortilla chips

directions:

  • toss shrimp with salt, pepper, and juice from 1 lime
  • saute shrimp ~1-2 min on each side
  • place chopped lettuce, cherry tomatoes, cilantro, avocados, and shrimp into large bowl
  • mix olive oil, juice from 1 lime, honey, chili powder, and salt/pepper for dressing
  • toss salad and add chips
