- Chives - for garnishes, soups, sauces, mashed potatoes
- Cilantro - (also known as coriander and Chinese parsley) for soups, salads and garnishes, salsas, vinaigrettes
- Dill - for omelettes and deviled eggs, fish dishes, sour cream and yogurt dips/sauces
- Garlic - for everything!
- Lavender - for ice creams, custards, shortbreads, keeping scorpions away and making a room smell great
- Mint - for teas, garnishes, salads
- Pandan - for rice, coconut desserts, chicken dishes
- Rosemary - for lamb dishes and meat I want to grill
- Saffron - for congees, risottos, bouillabaisse and paella
