• Ingredients

(serve 12 crepes)

  • 1 1/2cups flour
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 2 eggs beaten
  • 1 tbs sugar
  • 2 cups soy milk or milk
  • 1/2 tsp vanilla
  • 2 tbs butter melted

  • Directions
  • 1. Mix flour and baking powder in a small bowl and set aside.

Mix eggs, sugar, soy milk, vanilla and butter in a big bowl and mix well. Add the flour and baking soda to this bowl and mix well.

  • 2.Heat a griddle to 350 degrees and pour the batter with a ladle. Flip after a minute or so.

(make them as thin as you can ) They should be about 8 inches round. Good luck flipping them!

  • 3.Add the fruit when you are done and roll them up.
  • This amount makes 12 crepes.
