(serve 12 crepes)
- 1 1/2cups flour
- 1/2 tsp baking powder
- 1/2 tsp salt
- 2 eggs beaten
- 1 tbs sugar
- 2 cups soy milk or milk
- 1/2 tsp vanilla
- 2 tbs butter melted

- Directions
- 1. Mix flour and baking powder in a small bowl and set aside.
Mix eggs, sugar, soy milk, vanilla and butter in a big bowl and mix well. Add the flour and baking soda to this bowl and mix well.
- 2.Heat a griddle to 350 degrees and pour the batter with a ladle. Flip after a minute or so.
(make them as thin as you can ) They should be about 8 inches round. Good luck flipping them!
- 3.Add the fruit when you are done and roll them up.
- This amount makes 12 crepes.
