• FETTUCCINE WITH PUMPKIN, FETA AND CHERRY TOMATOES
• need: half a small butternut pumpkin, 150g feta cheese, punnet of cherry tomatoes, 500g fettuccine, smallish bunch of basil, a lemon, olive oil
• slice butternut pumpkin into 1cm thick pieces. coat with olive oil and put on a tray into preheated oven at 180 for 15-20 mins, then flip and cook for 5-10 more.
• cook fettuccine according to packet directions
• while pasta is cooking, halve cherry tomatoes and roughly chop basil leaves (about a cup)
