4 eggs
★ 40cc soy sauce
★ 40cc mirin
★ 1 teaspoon sugar
① Use a needle to poke a small hole in the rounded end (bottom) of each egg at room temperature.
② Gently place the eggs into boiling water and roll them quietly for about 30 seconds.
Boil for 6 minutes.
③ Transfer immediately to ice water and peel the shells.
④ Soak the peeled eggs in the marinade ★ for 1 day (half a day works too if you’re in a hurry).
Optional: Add sliced red chili or a bit of sesame oil for extra flavor!
