- Ingredients: Toasted sesame oil, yellow onion, organic red miso paste, tahini paste, siracha, shiitake mushrooms, baby spinach, toasted sesame seeds, green onions, hard boiled eggs, togarashi and fresh ramen.
- Method:
- Take you yellow onion, peel it and slice it thin.
- Add two tablespoons of sesame oil yo a hot pan on you stove.
- Remove the stems form your mushrooms and start chopping the cops.
- Add the mushrooms to your hot oil, then add a little more oil.
- Boil two eggs on a pat of water.
- Measure out half a cup of tahini paste and half a cup of miso paste.
- Add to your mushrooms then puor in eight cups of purified water.
- Add two tablespoons of siriracha to the mix. Time for a taste test.
- Prep your toppings, including you green onions, by cutting them on the bias.
- In another pot of boiling water, heat four 10oz packages of ramen for 3 min and 30 sec.
- Strain you ramen, then use tongs to split the noodles into four bowls.
- Ladle your mushroom soup into each bowl on the side.
- Add sliced avocado and half a hard boiled to each bowl.
- Finish with spinach, green onions and micro cilantro.
- Spinkle with togarashi and sesame seeds.
