- Ingredients:

Champagne Mignonette: 3/4 cup champagne; 6 teaspoons finely diced shallots; 6 tablespoons champagne vinegar; Freshly cracked black pepper

Oysters: 30 Kusshi oysters, shucked, on the half shell; Lemon wedges and freshly grated horseradish, for serving

- Method:

  • For the champagne mignonette: Combine the champagne, shallots, champagne vinegar and plenty of cracked black pepper in a small bowl.
  • For the oysters: Arrange the oysters in a shallow container filled with crushed ice. Serve with the champagne mignonette, lemon wedges and freshly grated horseradish.
