- Ingredients: canola oil for frying, 3 very ripe plantains sliced 1/4-inch-thick on the bias and kosher salt to taste.

- Method:

  • In a large pan over medium-high heat, heat 1/8 inch canola oil to 350°.
  • Add the plantains and cook, flipping every 3 minutes or so until deeply golden brown, soft and juicy about 12 minutes total.
  • Remove fried plantains to a papper towel-lined plate and sprinkle with salt.
