- Ingredients: Short rib, eggs, tater tots, flour tortillas, onions, green onions, garlic, kiwi, gochugaru, soy sauce, mrin, canola oil, sesame oil, rice wine vinegar, orange juice, lime juice, sugar, jalapeño and sesame seeds.
- Method:
- Into your blender pour 1 cup of soy sauce, 1/2 cup of sesame oil, 1/2 cup of mirin, 4 tbsp of canola oil, 1/4 cup of sugar, 1/2 cup of chopped cloves and 4 chopped green onions.
- Add 1/2 an onion, 1 kiwi (no skin) and 2 tbsp sesame seeds.
- Blend for a few seconds until liquid.
- Take 2lb boneless beef short rib and place in a bowl. Gradually pour your marinade over and push on your meat until all the marinade is gone.
- Leave to the side to marinate.
- Heat 2 cups of canola oil in a pan on a low-medium heat.
- Add two cups of garlic cloves.
- Chop the other half of your onion and 2-3 jalapeños.
- In another pan, heat a drop of canola oil, then add your onion and jalapeños.
- Pour 1 cup soy sauce, 1/2 a cup of sesame oil, 1 cup canola oil and 2 cups rice wine vinegar into your blender.
- Add 8 garlic cloves, 1/4 cup sugar, 1/4 cup gochugaru, 2 rough chopped green onions and a handful of sesame seeds.
- Take a stalk of ginger and peel it. Rough chop a 1/2 cup and add to the blender.
- Pour your mix into a bowl and set aside, then mince 1 onion and 1 bunch of cilantro. Put in another bowl and squeeze in the juice of one lime.
- Turn off your two pans, then fill a dutch oven with a grip of canola oil and turn it on a low-medium heat.
- Take a grill pan and drizzle a little oil, then add your meat. Cook until it's dark and charred without being burnt.
- Take your cooked onions and garlic and pour into the blender. Add 5 oz orange juice and 5 oz lime juice, olus salt and pepper.
- Add 6 bunches of cilantro to the blender and blend.
- Slice your meat into small strips and place in a dish.
- Crack 6 eggs into a bowl. Whisk with a fork.
- Fry your tater tots in the dutch oven until they're golden brown and delicious.
- Toast 6 tortillas on your stove.
- Melt 2 tbsp butter in a pan and add your eggs. Shake the pan, swirl the eggs and then switch off your flame.
- Heat your short rib again in the dutch oven until it's warmed through.
- Lay out your tortillas add meat first then eggs, then tater tots and your sauces you blended earlier.
