Broccoli Cheese Soup

  • "I grated up a crap ton of medium cheddar and gouda cheeses... probably like 6 cups or more... diced up a 1/2 onion, 3-4 cloves garlic, a handful of baby carrots, and a couple of big broccoli stalks... melt about a 1/2 stick or more of butter, saute the onion and carrots til the onions are done, then toss in garlic, saute about a minute, add flour... I put 1/2 cup because I wanted to make enough to freeze leftovers... cook about a minute, add 2 cups chicken broth (I just made some w boullion powder) slowly while whisking, and 2 cups half and half cream, add seasonings... I put in (without measuring but probably a tbsp or 2) parsley, garlic powder, onion powder, sea salt, black pepper, ground mustard, & paprika to taste... and the broccoli. Boil then simmer. When the broccoli is tender after like 5-10 min, turn off the heat and stir in the cheese."
