- Toast crostini with usual steps: drizzle of olive oil on each, salt & pepper
- Once out of the oven, cut slices of store bought mozarella cheese and fit on bread
- Grate some parmesan cheese over it
- Slice thin stips of the roasted red peppers and place on on top
- Put it back in the oven just until the cheese melts
- Once you take it out, garnish the crostini with stips of basil
- Finish it off with thin drizzles of balsamic vinegar - a little goes a long way.

- Adrak Chai w/ Elaichi
- Bring 3/4 cup milk and 1/4 cup water to a boil.
- Drop in 1/2" grated ginger, and 3-5 pods of cardamom crushed with a mortar & pestle.
- One the mix is boiling, lower the heat slightly so the milk doesn't boil over.
- Put 1 tsp of chai patti into the milk.
- Let it infuse for 1 minute. Any longer and the chai will become very strong, and turn bitter.
- Turn heat off. Strain the chai of the ginger, cardamom, and chai patti through a fine mesh strainer in a measuring cup.
- Put 2-4 tsps of sugar in the tea cup, and pour the tea.
- Mix well, and serve hot.
