flauelsgrautur = "velvet pudding" an icelandic pudding that is to melt in your mouth. i have reduced the measurements by a half to make a smaller batch.

  • 3/4 stick of butter (unsalted)
  • 1 litre milk (boiling)
  • 1 cup flour

melt butter in a small saucepan, add sifted flour and mix well (it will be clumpy). add boiling milk, portion by portion and mix well in between. cook on low heat until it gets thick, like a pudding. add cinnamon sugar (i like to use a lot, whereas others will just sprinkle it on top). the pudding will thicken as it cools.
