Short definition: Epic Metal is classic 80's Heavy Metal with lyrics about battles, history, legends, fantasy novels. So it is a mix of pure epicness !
Attention: DO NOT confuse epic songs with Epic Metal! Simple example: bands like Rhapsody or Blind Guardian (which both I like too) ARE NOT Epic Metal bands!
