chocolate jack-o-lantern graham s’mores with homemade marshmallows

chocolate graham crackers
- 2 cups graham or whole wheat pastry flour
- 1 3/4 cups all-purpose flour
- 1/3 cup cocoa
- 1/2 cup sugar
- 1/2 teaspoon salt
- 1 teaspoon bakking soda
- 1 teaspoon vanilla extract
- 1/4 cup honey
- 1/4 cup (1/2 stick) butter, softened
- 1/4 - 1/2 cup milk
- 1 batch of homemade marshmallows or 1 bag store-bought
- 2 - 3 100g bars semi-sweet or milk chocolate
instructions
- preheat oven to 325 degrees f (160 c)
- add flours, cocoa, sugar, salt, and soda into food processor and pulse
- add butter, vanilla, and honey. and pulse until combined
- add 1/4 cup milk and pulse until a dough forms
- if the dough seems too dry and crumbly continue adding more milk until it you can form it into a ball in your hand
- turn out onto lightly floured surface and roll into a layer about 1/8 to 1/4 inch thick and cut into desired shapes
- bake for 6 - 8 minutes until crisp.
homemade marshmallows
- work in small batches by placing a few graham crackers on baking tray
- place 1 to 2 squares of chocolate on half of the crackers
- put in oven for 2 - 3 minutes until chocolate is melty
- remove from oven and allow to cool for a minute
- * place marshmallows on chocolate and carefully top with warm crackers
- allow to cool slightly before serving
store-bought marshmallows
- work in small batches by placing a few graham crackers on baking tray
- place 1 to 2 squares of chocolate on half of the crackers and marshmallows on other half
- put in oven for 2 - 3 minutes until chocolate is melty and marshmallows puff
- remove from oven and pair chocolate topped crackers with marshmallow topped crackers and press down slightly
- serve warm
