chocolate jack-o-lantern graham s’mores with homemade marshmallows

chocolate graham crackers

  • 2 cups graham or whole wheat pastry flour
  • 1 3/4 cups all-purpose flour
  • 1/3 cup cocoa
  • 1/2 cup sugar
  • 1/2 teaspoon salt
  • 1 teaspoon bakking soda
  • 1 teaspoon vanilla extract
  • 1/4 cup honey
  • 1/4 cup (1/2 stick) butter, softened
  • 1/4 - 1/2 cup milk
  • 1 batch of homemade marshmallows or 1 bag store-bought
  • 2 - 3 100g bars semi-sweet or milk chocolate

instructions

  • preheat oven to 325 degrees f (160 c)
  • add flours, cocoa, sugar, salt, and soda into food processor and pulse
  • add butter, vanilla, and honey. and pulse until combined
  • add 1/4 cup milk and pulse until a dough forms
    • if the dough seems too dry and crumbly continue adding more milk until it you can form it into a ball in your hand
  • turn out onto lightly floured surface and roll into a layer about 1/8 to 1/4 inch thick and cut into desired shapes
  • bake for 6 - 8 minutes until crisp.

homemade marshmallows

  • work in small batches by placing a few graham crackers on baking tray
  • place 1 to 2 squares of chocolate on half of the crackers
  • put in oven for 2 - 3 minutes until chocolate is melty
  • remove from oven and allow to cool for a minute
  • * place marshmallows on chocolate and carefully top with warm crackers
  • allow to cool slightly before serving

store-bought marshmallows

  • work in small batches by placing a few graham crackers on baking tray
  • place 1 to 2 squares of chocolate on half of the crackers and marshmallows on other half
  • put in oven for 2 - 3 minutes until chocolate is melty and marshmallows puff
  • remove from oven and pair chocolate topped crackers with marshmallow topped crackers and press down slightly
  • serve warm
