ingredients

  • three eggs
  • three tablespoons of milk
  • one and a quarter tablespoons of butter-ish
  • kosher salt/pepper
  • non-stick pan

instructions

  • mix the eggs and milk together lightly, you want them to caress each other lovingly but you don't want whipped cream
  • while they caress you should melt the butter over medium heat until it bubbles
  • turn the pan to low-medium heat
  • pour the egg and milk mix into the pan and steadily stir it
  • as soon as curds begin to form crank the heat up high
  • do not stir - fold the eggs gently over themselves while taking the pan in your other hand and shaking it steadily
  • when you shake the pan the liquid in the pan should spread out
  • when there is no more liquid in the pan, remove from heat and serve
  • delicious
