ingredients
- three eggs
- three tablespoons of milk
- one and a quarter tablespoons of butter-ish
- kosher salt/pepper
- non-stick pan
instructions
- mix the eggs and milk together lightly, you want them to caress each other lovingly but you don't want whipped cream
- while they caress you should melt the butter over medium heat until it bubbles
- turn the pan to low-medium heat
- pour the egg and milk mix into the pan and steadily stir it
- as soon as curds begin to form crank the heat up high
- do not stir - fold the eggs gently over themselves while taking the pan in your other hand and shaking it steadily
- when you shake the pan the liquid in the pan should spread out
- when there is no more liquid in the pan, remove from heat and serve
- delicious
