ingredients
- 3 red bell peppers
- 2 tb onion
- 2 tb garlic, minced
- 1/4 cup fresh basil, sliced
- 3 tb olive oil
- 1-1/2 cups half and half
- 1 tsp cornstarch
- 1/3 cup parmesan cheese
- 2 tb butter
- salt & pepper to taste
directions
- preheat broiler. cut peppers, remove seeds, coat with olive oil, and place cut side down on cookie sheet. broil until skin is blackened.
- remove from oven, place into paper bag (or tupperware) and allow to steam for 5-10 minutes.
- remove skin from peppers and cut into small pieces.
- saute garlic, basil, red peppers and onion in olive oil (10 minutes)
- blend mixture until desired consistency
- mix cornstarch and half and half in separate bowl, no lumps
- place mixture back in frying pan and bring to boil, gradually stir in half and half mixture.
- add cheese, butter, and season to taste with salt & pepper, let simmer for 5 mins
additional
- if it thickens too much, add half and half
