ingredients

  • 3 red bell peppers
  • 2 tb onion
  • 2 tb garlic, minced
  • 1/4 cup fresh basil, sliced
  • 3 tb olive oil
  • 1-1/2 cups half and half
  • 1 tsp cornstarch
  • 1/3 cup parmesan cheese
  • 2 tb butter
  • salt & pepper to taste

directions

  • preheat broiler. cut peppers, remove seeds, coat with olive oil, and place cut side down on cookie sheet. broil until skin is blackened.
  • remove from oven, place into paper bag (or tupperware) and allow to steam for 5-10 minutes.
  • remove skin from peppers and cut into small pieces.
  • saute garlic, basil, red peppers and onion in olive oil (10 minutes)
  • blend mixture until desired consistency
  • mix cornstarch and half and half in separate bowl, no lumps
  • place mixture back in frying pan and bring to boil, gradually stir in half and half mixture.
  • add cheese, butter, and season to taste with salt & pepper, let simmer for 5 mins

additional

  • if it thickens too much, add half and half
