allow one and a half hours to prepare

  • INGREDIENTS
    • 1/2 lb carrots
    • 2 cups wholewheat flour
    • 1 tbs baking powder
    • 60g sultanas
    • 125g margarine
    • 125g raw demerara sugar
    • 1 tbs sesame seeds
  • METHOD
    • clean, top and tail (and peel if necessary) the carrots then coarsely grate them and set aside
    • put the flour, baking powder and sultanas in a bowl and mix thoroughly
    • melt the margarine in a small saucepan over a low heat then add the sugar and stir until dissolved, remove from heat and pour over the flour mixture
    • add the grated carrots and mix well
    • transfer the cake mixture to a small, lightly greased cake or bread tin, sprinkle the sesame seeds on top and bake for about 50 minutes at 163°c till a knife can be inserted in the centre and come out cleanly
    • allow to cool before removing from the tin
