allow one and a half hours to prepare
- INGREDIENTS
- 1/2 lb carrots
- 2 cups wholewheat flour
- 1 tbs baking powder
- 60g sultanas
- 125g margarine
- 125g raw demerara sugar
- 1 tbs sesame seeds
- METHOD
- clean, top and tail (and peel if necessary) the carrots then coarsely grate them and set aside
- put the flour, baking powder and sultanas in a bowl and mix thoroughly
- melt the margarine in a small saucepan over a low heat then add the sugar and stir until dissolved, remove from heat and pour over the flour mixture
- add the grated carrots and mix well
- transfer the cake mixture to a small, lightly greased cake or bread tin, sprinkle the sesame seeds on top and bake for about 50 minutes at 163°c till a knife can be inserted in the centre and come out cleanly
- allow to cool before removing from the tin
