Fish salad (tuna or salmon; raw or cooked; smoked is great too)
Potato and egg salad (simple and awesome)
Lobster salad (luxurious! but usually pretty cheap at Costco)
The French salad with mass seafood (had it once, it was heaven in my mouth)
Spaghetti salad (preferably with seafood; optional with yogurt)
