Ingredients:
- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 3 ripe bananas (1 1/2 cups once mashed)
- 3/4 cup white sugar
- 1 egg
- 1 tsp vanilla
- 1/3 cup butter (melted)
Directions:
- Preheat oven to 350 F.
- Coat muffin pans with non-stick spray, or use paper liners.
- Add flour, baking powder, baking soda & salt in a bowl. Whisk to combine & set aside.
- In a large bowl, combine bananas, sugar, egg, vanilla & melted butter. Fold in flour mixture & mix until dry ingredients are just combined. Do not over mix (this will make your muffins tough)
- Scoop about 1/4 cup of batter each muffin tin.
- Bake for 15-20 mins. Muffins will spring back when lightly tapped.
