Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 3 ripe bananas (1 1/2 cups once mashed)
  • 3/4 cup white sugar
  • 1 egg
  • 1 tsp vanilla
  • 1/3 cup butter (melted)

Directions:

  • Preheat oven to 350 F.
  • Coat muffin pans with non-stick spray, or use paper liners.
  • Add flour, baking powder, baking soda & salt in a bowl. Whisk to combine & set aside.
  • In a large bowl, combine bananas, sugar, egg, vanilla & melted butter. Fold in flour mixture & mix until dry ingredients are just combined. Do not over mix (this will make your muffins tough)
  • Scoop about 1/4 cup of batter each muffin tin.
  • Bake for 15-20 mins. Muffins will spring back when lightly tapped.
