I give myself a month to stay caught up. So if a book comes out February 3, I have until March 3 to get it if I want to stay caught up with a series. Occasionally I modify this (like if I can only get the book online, but I can't order from Amazon for a month or two).

Technically I've completed Trigun, Magic Knight Rayearth I, Gravitation EX, .hack//Another Birth, Legend of Zelda: A Link to the Past , but the series have continued (in Trigun Maximum, Magic Knight Rayearth II, and Gravitation, .hack//(other series), Legend of Zelda (other series) respectively).
