congee
- 1 cup of rice
- 6 cups of water or other kinds of stock
- opt: literally anything; soy sauce, sesame oil, green onions, soft/hard boiled egg, leftover meat, fried garlic, pickled veggies, etc.
- also need a strainer and a 2-4 qt saucepan w lid
- bring to a boil and then reduce to a simmer and cover
- continue simmering for abt 1.5 hrs, stirring occasionally, simmer until desired consistency
- leftovers can be kept in the fridge for up to 5 days
