• INGREDIENTS
    • rolled oats (1 cup for mixture / some for blitzing into flour)
      • if you don't have a blender to make oat flour, can use normal flour
    • two eggs
    • oat milk (1 cup)
      • can substitute with any milk you like
    • vanilla extract (1 tsp)
    • coconut oil / honey / any low sugar sweetener (1 tbsp)
    • baking powder (2 tsp)
    • any toppings / additions you like
  • METHOD
    • pour the 1 cup of rolled oats and 1 cup of milk into a bowl and leave to sit for 10 minutes so the oats soak up the milk
    • add your sweetener and your eggs to the bowl, mix
    • add flour and baking powder and fold everything together
    • heat up a frying pan and coat with an oil of your choice
    • scoop 1/4 of the mixture into the pan and cook for 2-3 minutes
    • flip and repeat

  • OTHER
    • this batter will yield about 8 small/medium pancakes
    • you can freeze the pancakes and defrost in the toaster
    • you can also leave the spare batter in the fridge - it's even better once it's soaked up the oats for longer
