- INGREDIENTS
- rolled oats (1 cup for mixture / some for blitzing into flour)
- if you don't have a blender to make oat flour, can use normal flour
- two eggs
- oat milk (1 cup)
- can substitute with any milk you like
- vanilla extract (1 tsp)
- coconut oil / honey / any low sugar sweetener (1 tbsp)
- baking powder (2 tsp)
- any toppings / additions you like
- METHOD
- pour the 1 cup of rolled oats and 1 cup of milk into a bowl and leave to sit for 10 minutes so the oats soak up the milk
- add your sweetener and your eggs to the bowl, mix
- add flour and baking powder and fold everything together
- heat up a frying pan and coat with an oil of your choice
- scoop 1/4 of the mixture into the pan and cook for 2-3 minutes
- flip and repeat

- this batter will yield about 8 small/medium pancakes
- you can freeze the pancakes and defrost in the toaster
- you can also leave the spare batter in the fridge - it's even better once it's soaked up the oats for longer
