This surprisingly filling and comforting Irish dish is basically potatoes mashed with greens, so you can feel healthy while consuming massive quantities of butter. Serves around 4.

Ingredients:

  • 3 lb baking potatoes, e.g. 'Russet'& 'Yukon Gold'
  • 1 lb kale or green cabbage
  • ~1 cup heated milk
  • ~4 T butter

Tools:

  • Stove
  • Microwave (optional)
  • Large pot
  • Potato masher or Large fork

Method:

  • Scrub potatoes, add to large pot, cover with water, and bring to a boil. Add a large pinch of salt. Cook for about 25 min, until almost done.
  • Meanwhile, wash greens. If using kale, remove tough stems. Tear or chop into large bite-sized pieces.
  • Add greens to pot and cook until potatoes are done, about 5 mins. To test, stab potatoes with knife; if they fall off immediately, they're done. Meanwhile, heat milk in microwave or on stove.
  • Drain contents of large pot. Return potatoes and greens to pot, add butter and hot milk, and mash contents with potato masher or large fork. Add salt and pepper to taste. Serve with extra butter.

Leftovers:

  • Potato Cakes: Form colcannon into thick cakes and heat in a skillet full of hot butter or oil until slightly browned. For extra flavor, mix in caraway seeds, green onions, or roasted garlic.
