Goats cheese and caramalised onion tart
- 10cm/4in circle of ready-made puff pastry
- 1 tbsp caramelised onions
- 55g/2oz goats' cheese, crumbled
- Thyme
- Preheat the oven to 220C/425F/Gas 7.
- Place the pastry circle onto a lightly floured baking sheet and spread the onions and cheese into the centre.
- Place the baking sheet into the oven and bake for eight minutes, or until the pastry is puffed up and golden.
- To serve, remove from the baking sheet.
Serve with asparagus and new potatoes. New potatoes
- Heat oven to 200C/fan 180C/gas 6. Boil the potatoes for 10 mins, then drain well. Arrange on a baking sheet, then crush each one lightly with a potato masher. Drizzle with olive oil and sprinkle with paprika, sea salt and freshly ground black pepper. Bake for 20 mins until crispy.
