ingredients:

  • 1 cup uncooked quinoa
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 jalapeno
  • 2 red bell pepper, diced
  • 1 cup corn
  • 1 lime
  • 1 tsp cumin
  • 1 tbsp chili powder
  • 1/3 cup cilantro, chopped
  • 2 cans black beans, drained and rinsed
  • 2 cups red enchilada sauce
  • 2 cups cheese
  • optional: avocado, sour cream

directions:

  • preheat oven to 350f and grease 9x13 baking dish
  • add quinoa and 2 cups of water and bring to boil for 5 min. reduce heat to low and simmer for 15 min. remove from heat and fluff with fork.
  • in a pan, add olive oil, onion, garlic, and jalapeno and saute until soft
  • add peppers and corn and cook for 3-4 min
  • add juice of lime, cumin, chili powder, and cilantro
  • season with salt/pepper to taste
  • in large bowl, add quinoa, black beans, sauteed veggies, 1/2 cup cheese and enchilada sauce
  • pour mixture into baking dish and add remaining cheese
  • cover dish with foil and bake for 20 min
  • remove foil then bake for 10 more min
