ingredients:
- 1 cup uncooked quinoa
- 1 tbsp olive oil
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 jalapeno
- 2 red bell pepper, diced
- 1 cup corn
- 1 lime
- 1 tsp cumin
- 1 tbsp chili powder
- 1/3 cup cilantro, chopped
- 2 cans black beans, drained and rinsed
- 2 cups red enchilada sauce
- 2 cups cheese
- optional: avocado, sour cream
directions:
- preheat oven to 350f and grease 9x13 baking dish
- add quinoa and 2 cups of water and bring to boil for 5 min. reduce heat to low and simmer for 15 min. remove from heat and fluff with fork.
- in a pan, add olive oil, onion, garlic, and jalapeno and saute until soft
- add peppers and corn and cook for 3-4 min
- add juice of lime, cumin, chili powder, and cilantro
- season with salt/pepper to taste
- in large bowl, add quinoa, black beans, sauteed veggies, 1/2 cup cheese and enchilada sauce
- pour mixture into baking dish and add remaining cheese
- cover dish with foil and bake for 20 min
- remove foil then bake for 10 more min
