ingredients:
- 1 cup crushed tomatoes
- 1/4 tsp apple cider vinegar
- 1 tbsp extra virgin olive oil
- 1 tsp minced garlic
- 1 tbsp fresh basil
- 1 tsp herb mix
- pepper
- 1/4 tsp chili powder
- 1 onion
- 1 zucchini
- 1 japanese eggplant
- 3 large roma tomatoes
directions:
- preheat oven to 350f and grease 6x9 baking dish
- combine crushed tomatoes, oil, apple cider vinegar, minced garlic, fresh basil sliced, herb mix, 1/4 tsp salt + pepper + chili powder
- pour tomato mixture into baking dish and smooth into even layer
- stack veggie slices in alternating patterns
- bake for hour
