ingredients:

  • 1 cup crushed tomatoes
  • 1/4 tsp apple cider vinegar
  • 1 tbsp extra virgin olive oil
  • 1 tsp minced garlic
  • 1 tbsp fresh basil
  • 1 tsp herb mix
  • pepper
  • 1/4 tsp chili powder
  • 1 onion
  • 1 zucchini
  • 1 japanese eggplant
  • 3 large roma tomatoes

directions:

  • preheat oven to 350f and grease 6x9 baking dish
  • combine crushed tomatoes, oil, apple cider vinegar, minced garlic, fresh basil sliced, herb mix, 1/4 tsp salt + pepper + chili powder
  • pour tomato mixture into baking dish and smooth into even layer
  • stack veggie slices in alternating patterns
  • bake for hour
