ingredients:
- snow peas
- 1/2 lbs ground chicken
- 2 tbsp soy sauce
- 2 tbsp sugar
- 2 tbsp sake
- 2 tbsp mirin
- 1/2 tsp ground ginger
- 3 eggs
directions:
- remove stem and tough strings from snow peas
- blanch snow peas in salted water for 2-3 min then dunk in ice water
- julienne and set aside in small bowl
- add ground chicken, soy sauce, 1 tbsp sugar, 1 tbsp sake, 1 tbsp mirin, and ground ginger together on a pan and cook over medium heat
- cook for 5-7 min and set aside in small bowl
- whisk eggs and 1 tbsp sugar, 1 tbsp mirin, 1 tbsp sake, and pinch of salt together
- make scrambled eggs with mixture
- assemble the soboro don with the snow peas, chicken, and egg on bowl of rice
