ingredients:

  • dry scallion roots
  • 3 long strips of dashima
  • daikon
  • 2 bunches of spinach
  • 1 onion
  • tofu
  • enoki mushroom
  • 2 tbsp minced garlic
  • 2 tbsp miso
  • 1 tbsp soy sauce
  • 1 tbsp veggie powder
  • 3 jalapenos

directions:

  • make soup stock: dry scallion roots, 2nd + 3rd rinse of rice water, dashima, daikon
  • boil soup for 15 minutes
  • add spinach, onion, tofu, enoki mushroom, jalapenos
  • add minced garlic, miso, soy sauce, veggie powder
  • boil for another 15 minutes
