ingredients:
- dry scallion roots
- 3 long strips of dashima
- daikon
- 2 bunches of spinach
- 1 onion
- tofu
- enoki mushroom
- 2 tbsp minced garlic
- 2 tbsp miso
- 1 tbsp soy sauce
- 1 tbsp veggie powder
- 3 jalapenos
directions:
- make soup stock: dry scallion roots, 2nd + 3rd rinse of rice water, dashima, daikon
- boil soup for 15 minutes
- add spinach, onion, tofu, enoki mushroom, jalapenos
- add minced garlic, miso, soy sauce, veggie powder
- boil for another 15 minutes
